Ingredients:
- 240 g all-purpose flour
- 1 cup sugar
- 1 whole egg room temperature
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2⁄3 cup milk
- ½ cup oil
- 1 cup shredded coconut
Method:
- Mix the flour, sugar, baking powder, and salt
- Wisk the egg, milk and oil
- Use a rubber spoon to combine with the flour for just 30 seconds
- Add coconut, ans mix
- Bake in 205 °C oven for 10 minutes, in muffin bake tray

- Add any toppings - we chose our coconut tiramisu cream.
